I don't know what garlic variety it is. It seems to be pretty mild, based on the aroma and how it tastes when cooked (cooked garlic is much milder than raw). I have not actually tasted a raw clove. I saved the woody stalks to add to broth.
"Garlic Surprise" is when I throw a whole bud of garlic into any kind of soup or stew. It's mostly to flavor the whole dish, but it's a surprise for whoever gets the bud in their soup dish. The lucky winner can squeeze the cloves out of their little papery wrappers and eat them with the stew or just toss the whole thing back into the pot.
